Healthy Foxtail Millet Snack - Simple Thinai Laddu

Thinai / foxtail millet has the longest history of cultivation. It is even considered to be the first human-grown culture. In South India it is still a staple food among the people. It has many nutritional and health benefits. This sweet laddu recipe is a healthy treat. It does not contain white sugar or food coloring.

ingredients

1 cup of foxtail millet (Thinai Arisi)

8-10 cashew nuts

1 cup of jaggery

2 tablespoons of water

3 cardamom

preparation

  • Wash the millet and soak in water for about five minutes.
  • Drain the water, spread the millet on a cloth-lined plate and let it dry for about an hour.
  • Dry the fried thinai in a pan and as soon as the color changes slightly and you smell a pleasant aroma on it, stop roasting and let it cool.
  • After cooling, coarsely grind in a blender jar.
  • In the meantime, take the same amount of jaggery as the powdered thinai. Melt in hot water and strain.
  • Heat a tablespoon of ghee and fry the cashew nuts until golden brown.
  • Put the pulsed thinai in the same pan and gradually add the jaggery syrup until the powder can be formed into balls.
  • Roll yourself in balls and enjoy this traditional snack!

Tips:

  1. Most of the recipes we can find online ask us to finely powder the dried thinai, but the laddu tastes crispy when we powder it coarsely.
  2. Adding a pinch of cardamom powder can increase the flavor goodness of this laddu.
